The SANTO the Tomato process factory for Santorini Tomato PDO,  operates once a year during a harvest for Santorini Tomatoes, from mid June to about the first 10 days of July, depending on the annual volume of production. Santo is the island's co-operative and receives Santorini's Tomatoes from its members, all the producers of Santorini.

The production steps include sorting, washing, and then depending on the product to be produced different procedures follow.

The most traditional product made by PDO Santorini Tomato  is the famous Santorini Tomato paste. The juice of tomato is concentrated and gives us tomato paste of single, double or triple concentration with exquisite aromas and taste, unique products that reflect their volcanic origin!

In a separate, specially designed area, Santo also processes and packages other traditional products of the island,  PDO Santorini Fava, capers and caper leaves.
